It is an ancient first course of Lunigiana with a round shape and a soft and spongy consistency to be cut into squares of about 5/6 cm before being cooked.

Description

According to some sources the origin dates back to Ancient Rome, so much so that they are considered the most ancient type of pasta ever existed. Dip the squares of 5/6 cm in boiling salted water for less than a minute, or the time needed to rehydrate the product. Season immediately with good Ligurian Pesto.
