Typical Ligurian pasta with a particular curled shape in the shape of a trucciole. The Trofie is a typical Ligurian pasta made with a hard, thin, curled durum wheat semolina which traditionally is served with Genoese basil Pesto.

Description

The name may derive from the Genoese “strofoggià”, or rub, from the movement necessary to curl them with the hand that crawls the dough on the platform. Cook in boiling salted water and season with Alberti pesto with garlic or without garlic.
